Roasted Red Pepper and Basil Tuscan Flatbread

1 cup lukewarm water
2 tsp yeast
2 cups flour
2 TBS olive oil
4 large tomatoes
1 onion
1 red pepper
1/2 cup black olives
2 tsp red pepper flakes
2 tsp oregano
2 tsp basil
1 tsp parsley
1/2 lb mozzarella
Wood-fired grill

Pour 1 cup lukewarm water into small bowl; sprinkle with yeast. Let stand until yeast dissolves, about 10 minutes.
Place 2 cups flour in large bowl. Pour yeast mixture into well. Using fork, stir until dough comes together.

Knead dough about 10 minutes.



Toss in the air periodically.



Brush dough with remaining 2 tablespoons oil. Sprinkle with salt.

Pizza sauce: boil tomatoes for 20 minutes. Drain, then crush until smooth.

Add diced onion, red pepper flakes, oregano, basil, and parsley. Spread evenly over dough.

Shred mozzarella over tomato sauce.

Slice red peppers, green peppers, and onions.



Place atop mozzarella.



Bake over a wood-fired grill for 25 minutes.



When crust is golden brown, remove. Let cool, then slice.



It’s cheaper than a plane ticket to Italy…yet JUST as good.
